The grapes come from the cold valleys of Bio Bio, Leyda and Casablanca. These valleys of cold weather, provide very fruity grapes, great structure and much freshness. The art of blending allows us to get the best of the three valleys, expressed in an exceptional sparkling wine.
After careful harvesting, the grapes are brought to the cellar for fermentation of the base wine. This fermentation occurs under strict temperature control. They then proceed to perform the second fermentation as per the traditional method. Once finished, the wine rests on its lees for 12 months and is then bottled and aged for six months before being released.
Viña Valdivieso for years has developed the art of making sparkling wines by the traditional method. This adds to expertiz finding the perfect cold places that deliver grapes of great character and great acidity. That is why we have selected the best lots of Pinot Noir and Chardonnay in the Bio Bio Valley, Leyda and Casablanca. This assembly determines obtaining a sparkling wine of great volume, intense fruity, elegant and very fresh expression.
Ideally enjoy whites with seafood sauces, salmon ceviche fish or white meat. Serve at 8-10 °.
