The fruit is obtained from selected vineyards in the Leyda Valley, on soils of medium fertility and good drainage. As the vineyards are close to the sea, they enjoy a strong marine influence. This causes the vines to develop in a cold environment, which determines the production of fresh grapes and mineral character.
After careful harvesting, the grapes are brought to the cellar for fermentation of the base wine. This fermentation occurs under strict temperature control. They then proceed to perform the second fermentation as per the traditional method. Once finished, the wine rests on its lees for 18 months and is then bottled and aged for six months before being released.
